Dave received a waffle maker for his birthday at the beginning of the month, so we have been faffing about, trying out different waffle recipes for the past three weeks and not been entirely impressed with any of them.
Until today.
Behold, The Jack Family 2/3rds American Approved Best EVER Waffle Recipe! These have a very liquid, thin batter which is what we had been looking for. Dense batters = dense waffles and we prefer the light and fluffy variety. It’s never good to feel like you’ve swallowed a couple of bricks after brekkie right?
Best Ever Waffle Recipe

Ingredients
- 3 tablespoons butter
- 1 1/2 cup flour
- 1 1/2 teaspoon baking powder
- Pinch of salt
- 2 tablespoons sugar
- 1 1/2 cup milk
- 2 eggs
Instructions
- Preheat waffle iron and read manufacturer's instructions. Melt butter in microwave. In a large bowl, combine flour, baking powder, salt and sugar. In another bowl, beat together milk and eggs. Whisk liquid mixture into dry ingredients until just combined. Stir in melted butter. Brush hot waffle iron with butter. Spoon about 1/2 cup of batter onto iron and close to cook. This first waffle will be the tester. Cook waffle until golden brown. Remove to plate and keep warm.

Will have to give this a go next time we waffle! We usually use the same recipe everytime but I cant remember at all if it's remotely similar to yours… it is yum though!
Have you tried any recipes with buttermilk? I usually adapt the pancake recipe from the buttermilk carton for waffles. Will have to try this one too 🙂

Can I share waffle recipe we like . . .
1 cup fine cornmeal 2 Tbs sugar 1 cup boiling water 2 eggs 1/2 cup milk 2 Tbs melted butter 1cup flour
2 tsp baking powder
Put cornmeal and sugar in bowl, mix slowly and add stir in boiliiing water. Cover and stand 10 minutes.
In another bowl put eggs, milk and butter.
Beat tog lightly stir into cornmeal mixture.
Sift tog flour and B.P. mix lightly into batter until combined. Stand 30 mins before cooking.
Superb recipe – going to be my “go to” waffle recipe after the fiddly recipes that came with the waffle iron!

Amazing! I bought a waffle maker a few months ago and had only used it once, as I didn’t like the first recipe I used. Just found this recipe and thought I would try it and it was amazing. Will be making waffles more often now! Light a fluffy just like you said 🙂
