Apple Cinnamon Cake

Apple Cinnamon Cake

I made this cake for the first time this week and I think it might be one of those awesome recipes that is just about fail safe.  It gets better……you only need one bowl.  I know.  Get baking!

You will need;

  • 150g butter, melted
  • 2 cups drained, slightly stewed apple or 1 can of apple pie filling (I bought this from the store for the first time and OMG it’s so yummy!)
  • 1 cup sugar
  • 2 eggs
  • 2 cups flour
  • 2 tsp cinnamon
  • 2 tsp baking powder
  • 1/2 cup sultanas (I used raisins)
  • 1/2 cup walnuts
  • icing sugar to dust

Preheat oven to 160, mix all ingredients, spoon into greased pan, bake for 55-60 min until skewer comes out clean, cool on wire rack and dust with icing sugar to serve.

This cake is divine, super moist and yummy and couldn’t be easier to make.  Loved it.

I thought that repainting all of the interior doors in our house would make a HUGE improvement to the very haphazard existing paint job.  I was right, after a couple of coats of paint they look fresh and new and have helped make the house

I am always surprised by the number of people that either say they don’t like eggplant or have simply never tried it.  It is super easy to prepare and is now in season here in new Zealand so you can pick them up from around

Twenty-ten is going swimmingly so far.  The days are long, hot and lazy, the weather has been great and we are all happy and healthy.  Even more so due to the odd appearance of a Resolution List prepared by Dave on New Years Day. It
