Easy No-Bake Cheesecake Recipe
I’ve had a request for my no-bake cheesecake recipe which has NEVER failed on me and is so delicious. You need to make this cheesecake about 24 hours in advance so you can be sure it has set, other than that it’s dead easy.

Fold in berries, don’t beat
Tip mix onto base, chill
TOPPING
1 tblsp sugar
Berry juice from can
1 lg tblsp cornflour
Mix sugar with cornflour and heat with juice, stir until thick, don’t boil.
Cool and spread over cheesecake. Ensure cheesecake sets in fridge for at least 6 hours prior to serving.
Hi, I am just making this cheesecake, it tastes delicious! Can you please tell me do I let the cheesecake set completely before pouring the juice/corn flour mix on top? Or do I do it all at the same time then let set in fridge?
Hi Kelly, you can pour the topping on as soon as it has cooled, so I pop the cheesecake in the fridge while I\’m working on the topping. So no, you don\’t have to wait for the cheesecake to set. Thanks for visiting!
Thanks, It is the easiest, cheapest cheesecake I've made (and I've made a few!), but is super yummy 🙂
Hi there. I am looking forward to making this receipe, but can you tell me what size the tin of berries is…
thanks Lesley
Hi Lesley it\’s a standard size tin 425 grams
Hi there. I've just tried your recipe. Are you meant to put the topping on just before serving? Or is it fine to keep in the fridge overnight before serving?
Hi Joanna I pop it on as soon as it has cooled down completely, its fine in the fridge overnight x
Can you use other fruit or variations I cant eat boysenberry. Thanks
Hi Karynne any fruit in syrup would be fine

Hi – first time attempting to make a cheesecake! Does the water need to be warm or boiled to dissolved gelatin into?
Thank you for the recipe, it’s so simple.
@Bex: as I often read, gelatin should be soaked in cold water for 5 – 10 mins, then add hot water or heat gently until dissolved.
