Easy No-Bake Cheesecake Recipe

No-bake-cheesecake-recipe

I’ve had a request for my no-bake cheesecake recipe which has NEVER failed on me and is so delicious.  You need to make this cheesecake about 24 hours in advance so you can be sure it has set, other than that it’s dead easy.

CHEESECAKE RECIPE

CRUST

1 packet of Superwines Biscuits
175 g (6oz) melted butter
1 tsp cinnamon

Crush bikkies, mix with butter and cinnamon and press into greased / lined springform pan.

FILLING

1 250 gm tub cream cheese
300ml cream
1 tblsp lemon juice
1+ tblesp gelatine
3/4 cup water
3/4 cup sugar
1 tin boysenberries

Dissolve gelatine in water
Beat gelatine, cream cheese, lemon and sugar until smooth
Whip cream until stiff and peaky
Fold in whipped cream
Beat a little
Fold in berries, don’t beat
Tip mix onto base, chill

TOPPING

1 tblsp sugar
Berry juice from can
1 lg tblsp cornflour

Mix sugar with cornflour and heat with juice, stir until thick, don’t boil.
Cool and spread over cheesecake.  Ensure cheesecake sets in fridge for at least 6 hours prior to serving.

I live in rural Auckland, New Zealand. Two boys, one big, one not so big and 2 boy dogs belong to me and I them. I love Coca Cola in all of its sugar-less forms and I love you internet. I take way too many pictures of my kids and collect them all here. This is what I am doing when I should be cleaning or cooking or doing other 'useful' things.

  1. Hi, I am just making this cheesecake, it tastes delicious! Can you please tell me do I let the cheesecake set completely before pouring the juice/corn flour mix on top? Or do I do it all at the same time then let set in fridge?

    1. Hi Kelly, you can pour the topping on as soon as it has cooled, so I pop the cheesecake in the fridge while I\’m working on the topping. So no, you don\’t have to wait for the cheesecake to set. Thanks for visiting!

  2. Thanks, It is the easiest, cheapest cheesecake I've made (and I've made a few!), but is super yummy 🙂

  3. Hi there. I am looking forward to making this receipe, but can you tell me what size the tin of berries is…
    thanks Lesley

  4. Hi there. I've just tried your recipe. Are you meant to put the topping on just before serving? Or is it fine to keep in the fridge overnight before serving?

    1. Hi Joanna I pop it on as soon as it has cooled down completely, its fine in the fridge overnight x

  5. Hi – first time attempting to make a cheesecake! Does the water need to be warm or boiled to dissolved gelatin into?

  6. Thank you for the recipe, it’s so simple.
@Bex: as I often read, gelatin should be soaked in cold water for 5 – 10 mins, then add hot water or heat gently until dissolved.
