Quiet.

One of my {small} goals for this year is to master the 6am wake-up. I am never late in the mornings but a crazy rush out of the house often involving multiple re-entries to retrieve locked-in dogs/keys/phone etc is not a graceful way to start the day.

So, as I return back to work this morning after a long weekend I did it! I got up early, showered, dressed, MADE MY BED, got breakfast ready for E, packed my lunch ………. all the while creeping around because Ethan is still asleep. 8.17am and E is snoring his head off.

So I will now back the truck out, load up and throw his breakfast in a tupperware while he sleeps and exit in a whirlwind once he wakes.

The lesson here is that even the best made plans are laid to waste in the wake of a sleeping child!

  1. We didn’t bother with the mad Post-Christmas shopping frenzy, but I DID bother with the Country Road sale, it was so good!
  2. The weather has kept us indoors for so many days lately, luckily E has lots of new books to read, he is currently steaming through the Roald Dahl box set which Santa brought him
  3. Mum and I took Ethan on his Quarterly Museum trip to escape the showers.  He has been going frequently for so many years, it is amazing to see the different things that he notices now he is a bit older
  4. We rang in 2012 with our lovely neighbours xx
  5. Debs (see lovely neighbour) & I had just been talking about loving your life, and look what was in my Christmas package from MeeMee in Georgia!  Weird
  6. 100% chance of rain.  First time I have ever seen that on my IPhone.  I’m sure it won’t be the last considering we have had more days of rain than sun so far this summer
  7. LOVE.
  8. One minute I was working, Nek Minnit the transformer in front of our building blew up.  True story.  So I got to play at the beach with Mum and Ethan!

Cook. Eat | Peach & Weet-Bix Muffins

This is neither a glamourous nor adventurous recipe but damnit we have some serious stock of Weet-Bix in the pantry!  All that aside, these muffins are really good, knobby with lots of texture, super easy and quick to make and they taste delish.

Recipe from Food in A Minute

Ingredients

  • 410g can Peaches in clear fruit juice
  • 8 Sanitarium Weet-Bix biscuits, crushed
  • 1 cup wholemeal flour
  • 1 cup flour
  • 1/2 cup brown sugar
  • 3 tsp baking powder
  • 1 tsp cinnamon
  • 3/4 cup lite milk
  • 2 eggs
  • 1 tsp baking soda
  • 50 g butter, melted

Tips

Grease muffin tins with a light spray of vegetable oil rather than butter.

Method

1. Preheat oven to 190°C. Drain Peaches , reserve the juice and chop peaches.

2. Place the crushed Sanitarium Weet-Bix biscuits, wholemeal flour, flour, brown sugar, baking powder and cinnamon into a mixing bowl. Stir ingredients together and add the chopped peaches.

3. Pour the milk and reserved fruit juice into a bowl. Add the eggs and baking soda. Whisk to mix.

4. Pour the egg mix into the dry ingredients. Add the melted butter. Mix together, being careful not to over-mix or the muffins will be tough.

5. Spoon the mixture into greased muffin tins. Bake for 18-20 minutes, until muffins are golden and spring back at a touch. Allow to cool for 5 minutes before turning onto a cooling rack.
