You will need;

1 pack Signature Range fresh spinach and cheese tortellini

1 x pot of fresh Delmaine Carbonara sauce

1 large tomato

1/2 yellow capsicum / bell pepper

6 mushrooms

1 zucchini

1 head broccoli

garlic to taste

Sautee zucchini, mushrooms, bell pepper and garlic in a tablespoon of EVOO.  I had a couple of leftover lamb sausages so I chopped these up and threw them in as well.

Get pasta boiling, should only take around 6min

Steam broccoli

chop tomato

heat sauce

Throw together in bowls.

DEVOUR.

Ethan and I didn’t go out looking for an ugly cake to buy Dave for his birthday, but lo and behold we found one anyway. We were picking up some things for the birthday dinner and Ethan spotted Louie in cake form! Although he was missing his requisite orange sweater, the likeness is uncanny, and Ethan knew his daddy would be totally stoked on a chocolate log decorated to look like a chocolate dog (I think one of the bakers at Pak n Save might be one of the 3 readers of my blog!!).

So Dave requested a modest birthday dinner of chicken burgers, fries and ice cream. I aim to please, so instead of chicken patties as he was expecting I splashed out on $20 worth of chicken breast [ouch] and whipped up the following marinade

In a bowl combine hideously expensive chicken with

* the rest of the bottle of Worcestershire sauce

* splash of dark soy sauce

* garlic

* Italian herbs

* frsh ground black pepper

* splash of Mrs. Balls hot Chili Chutney

Ta Da! Cook each breast in a hot iron skillet, and serve as part of a build-your-own-burger buffet line. I had fresh kaiser rolls, homemade beetroot chutney, the standard sauces, avocado mash, bacon, brie, cheddar, tomatoes and lettuce, coleslaw and potato wedges. So good, I could barely waddle around the kitchen to serve the desert dog!

Homemade Italian Salad Dressing

I found myself in a pinch this afternoon as I had promised to bring a salad to dinner at our neighbours house, only to find I was running very low on salad ingredients.  Never fear, pasta salad was made for such situations.  Of course I had no dressing so whipped up this little number and it was so good!

Ingredients

  • 1/2 cup Mayo
  • 1/3 cup White Vinegar
  • 1 teaspoon Vegetable Oil
  • 1 clove of Garlic, minced
  • 1/2 teaspoon Italian Seasoning
  • 1/2 teaspoon Parsley
  • 1 tablespoon Lemon Juice

And then….blend.  Simple as.  I sauteed 2 zucchini, mushrooms and corn in garlic and EVOO, added that to the pasta with chopped fresh tomato and tossed with the dressing.  Refrigerate.  Eat.  Your welcome.

How beautiful is this?  Dave & I made this in our fancy new dehydrator last night.  Ethan and Mum picked the strawberries and 8 hrs later voila! This flavour was strawberry-kiwi and we also made strawberry-apple-banana which was the yummiest.
